IP's thirty-two serves high-end steaks, delectable seafood dishes and some of the finest wines available on the Gulf Coast.
Food and Beverage Assistant Director John Gaulke manages the list of 740 selections of wines from California, France and Italy. The restaurant’s wine program also includes exquisite wines from Germany, including a 17-vintage vertical of Joh. Jos. Prüm Riesling Spätlese Mosel Wehlener Sonnenuhr, dating back to 1994.
thirty-two’s extensive wine menu also features wines for every palette, including sparking, white and red wines that can be ordered by the glass, half bottle or full bottle. Guests can enjoy themed wine flights to try various selections of wine, including the Flight of Whites that features Joel Gott, Sauvignon Blanc, Chardonnay, Riesling and much more. Flights of Elegant Reds can include Pinot Noir, Acrobat, Syrah, Tempranillo and several other options.

Specialty Chef Matthew Kallinikos creates flavorful dishes that pair perfectly with several wine options available at thirty-two. These menu items include American staples like dry-aged steaks, local seafood, including lobster, crab, and pan seared halibut, as well as a full vegetarian menu with creative options like seared tofu “scallops” and button mushrooms braised “escargot style.”
The restaurant was recognized among 12 other winners with Wine Spectator’s prestigious award for offering world-class casino dining experiences.
